Pre-heat the cup and flush the group head.
Dose 18 g, distribute evenly, tamp level.
Extract 36 g in 27 seconds. Serve immediately.
Rich & Steady
No.30 is a blend built to carry milk with authority. Dark, composed — it does not disappear into the cup. It holds its ground. Serve in the traditional measure: equal parts espresso, steamed milk, and foam.
Pull a double espresso using No.30, as Ritual I.
Steam 100 ml whole milk to 65C. Microfoam only.
Pour in a steady stream. Equal thirds: espresso, milk, foam.
Con Gelato
A meeting of extremes: the sharpest espresso we make, poured over the coldest cream. Not a dessert — a demonstration of contrast resolved in a single spoonful.
Chill a wide glass in the freezer for 10 minutes.
Place one generous scoop of vanilla gelato in the glass.
Pour the espresso directly over. Serve before it melts.
